New York has a lot of fairs being held through the year. Today I’m introducing one of the most famous world-wide fairs that attracts many whom are interested in science and education technology. Interphex 2010 (20-22 April) is an annual fair that presents the most up-to-date technologies, products and services. Bagels, the famous New Yorkan! Bagels are one of the most popular bakery products in New York cities. In case you tasted them in you travel to New York and you want the recipe, get a pen and a paper and write (or more logically, select via your mouse) the following:

1- Things you’ll need:

They differ according to the bagels type, but here’s a common recipe ingredients for plain bagels:

1 1/2 cups water
2 qt. boiled water
1 1/2 oz. sugar
1/2 oz. salt
1 egg white
2 packages yeast
3 1/2 cups bread flour

2- Mix them up: That’s the easy/fun part, just put tem all together to form the dough. Basically you’ll have to knead it for 5 minutes, but in other recipes you may require more time/effort !

3- Let the dough have some rest: Like any other dough, it has to have its time to rest, and ferment! Put the dough in a big blow and cover it. The basic bagel needs few hours for a rest, other bagels are lazier and need more time to get up from bowls!

4- Shape it: Get the dough out of the bowl and shape it either into the traditional bagel shape (a round shape with a central hole) or any shape you like. You can even write your name!

5- Another ‘cool’ rest: Place the bagels on a cookie sheet and store in the fridge for around 12 hours or overnight (again, check your bagel recipe for the specific amount of time to let the bagels have there ‘cool’ rest!).

6- It’s boiling time: Here comes the role of the ingredient: boiling water. After you get the bagels out of the fridge boil each for several minutes. The ‘secret recipe’ appears here by the way through your additives to the boiling water. Some recipes suggest adding honey or baking soda.

7- Dry and bake: Give your bagels some time to dry after you pick them up from the boiling water. Use the time of drying to heat your oven between 350 and 450 degrees Fahrenheit. That’s a typical temperature and the typical time is simply your sense!

Malta looking for stunning sea and beaches

It was in the smallest of the three islands (Comino) that we could fall in love with the Blue Lagoon, a strip of water with a special turqoise colour, to be visited, at its best,from late Spring to October. In fact in Winter (low season) boat connections with the island are scarce. Do not miss St May Tower, the largest coastal tower ever built buy the Knights.

Always looking for relax and peace (not for nightlife), you can rest in the charming island of Gozo: its landscape is picturesque with a capital, rabat, also referred to as Victoria.

Gozo is also home to the oldest neolitic temple in Malta, practically still intact notwithstanding its age (over 5600 years) and still worth a visit is Calypso’s cave, which Homer mentioned in his Odissey.

Gozo offers several beaches, scattered around the island (well known is Rambla Bay) and, in Qwejra scuba divers will find a most beatiful spot to explore.

A real holiday in Malta, Gozo and Comino is easy to organize and so close to Italy…

Some info on Malta: Malta’s Churches

During my short holiday in Malta, I remember that I was somehow surprised that valletta has more than a dozen churches. Therefore I decided that I had, at least, to visit a couple of them. My choice fell on two different churches: the Jesuits Church or the first building in Malta designed in the new baroque style, with its whitewashed simple interior and a raisen podium above the altar. The second church I decided to visit is the one edicated to the shipwreck of St Paul in Malta in AD 60 and one of malta’s most ornate churches. Here you can see two valuable pieces connected with St Paul: a fragment of his wristbone inside a gold reliquary and a part of the column to which he was tiend when he was beheaded in rome.

But, to tell you the truth, the main reason of my travel to Malta was no to go for churches, history and culture.. but I also wanted , above all, to enjoy its coasts, beaches and its sea, considering the ‘nightlife is not my cup of coffee’
